Ingredients:
- 1 kg. Oxtail
- 3 Bunches Bokchoy or Pechay
- 1 Large Eggplant
- 5 pcs. Snake Beans (Sitaw)
- 5 Cloves Garlic
- 1 Onion
- 1 tbsp. Annatto Powder or Saffron Powder
- 1 Cup Peanut Butter
- 1 tsp. Salt and Pepper
- 1 tbsp. Corn Starch
- 2 Cups Water
Procedure:
- Defat oxtail for 30 mins in medium heat.
- Saute onion and garlic. Add the defatted oxtail.
- Add salt and pepper, water, peanut butter and saffron powder or annatto powder.
- Then add all the vegetables snake beans, eggplant, and bokchoy or egg plant.
- Cook for 10 mins in medium heat.
- For the remaining 3 minutes, put the dissolved cornstarch. Turn into low heat.
- And ready to serve!
