Oxtail Kare-Kare

Oxtail Kare-Kare is a traditional Filipino stew made with tender oxtail, vegetables, and a rich peanut-based sauce, served with bagoong (shrimp paste).

Ingredients:

Procedure:

  1. Defat oxtail for 30 mins in medium heat.
  2. Saute onion and garlic. Add the defatted oxtail.
  3. Add salt and pepper, water, peanut butter and saffron powder or annatto powder.
  4. Then add all the vegetables snake beans, eggplant, and bokchoy or egg plant.
  5. Cook for 10 mins in medium heat.
  6. For the remaining 3 minutes, put the dissolved cornstarch. Turn into low heat.
  7. And ready to serve!
