Ingredients:
Dough:
- 1/4 Cup Butter
- 3/4 Cup Sugar 3 Large Eggs
- 3/4 Cup Rice Flour
- 3/4 Cup All Purpose Flour
- 2 tbsp. Baking Powder
- 1/2 tsp. Salt
- 1 Cup Coconut Milk
- 2 of 1/4 Evaporated Milk
- 1/2 Cup Water Cheese
Topping:
- Cheese
- Salted Egg
Procedure:
- In a bowl, put butter and beat until it has a creamy consistency. Then add the sugar and beat until
it is light and fluffy. Add the eggs and put all the dry ingredients. Continue mixing until completely combined. - Add the water and coconut milk, beat until it smooths. Add cheese and stir.
- Put banana leaves in electric skillet and pour the bibingka mixture.
- Set the temperature in 150 degrees in 50 mins After 45mins add the cheese and the salted egg and cooked for the remaining 5 mins.
