Ingredients:
- 1 medium Red Onion, sliced thinly
- 4 Green Onions, sliced thinly
- 1 large Fennel bulb, sliced thinly
- 1/2 cup Fresh Lead Parsley, chopped
- 2 trimmed Celery Stalks sliced thinly
- 1/3 cup Orange Juice
- 1/4 cup Olive Oil
- 2 cloves Garlic Crushed
- 2 tsp. Sambal Oelek
- 4 ×275 grams Salmon Fillet with Skin
Procedure:
- Combine onions, fennel, celery, and parsley in bowl.
- Put the orange juice, oil, garlic and sambal in screw-top jar, then shake well.
- Grill salmon in griddle pan for 10 mins. 5 mins both sides.
- Pour half the dressing over salad in bowl. Toss gently to combine. Serve salad topped with fish, drizzle with remaining dressing.
