Goto Batangas

Goto Batangas is a hearty Filipino rice porridge made with beef tripe, seasoned with ginger, and typically served with a boiled egg, green onions, and a dash of fish sauce or soy sauce. It’s a popular breakfast or comfort food in Batangas.

Ingredients:

Procedure:

  1. Defat beef meat, heart, intestine, ox tripe for 30 min. Then slice into cubes.
  2. Sauté onion, garlic and ginger. Add defatted beef meat, intestine, heart, and ox tripe.
  3. Add rice water, black pepper, fish sauce, bay leaves, pepper corn saffron powder, and achuetepowder.
  4. Cook for 15 mins. 230 deg. Once the vapovalve clicks, change into low heat in 150 deg. After 2 mins left add dissolved cornstarch.
  5. Garnish with chili, spring onion and fried garlic.. serve hot.
