Ingredients:
- 1 lbs. Boneless Chicken Breast
- 1 Cup Tomatoes (Diced)
- 1 Cup Black Beans (Boiled)
- 1 tsp. Cumin Powder
- Cheddar Cheese
- 1 Onion (Chopped)
- 1 Garlic (Chopped)
- 1 Cup Brown Rice (Uncooked)
- Black Pepper
- Garlic Powder
- 1 Cup Mexican Cheese (Shredded)
Procedure:
- Sauté chicken until it turns golden brown, then set aside.
- In same pan, sauté brown rice and put all other ingredients.
- Add water or chicken broth.
- Place the
- chicken on top.Simmer until rice is cooked and tender.
- Remove from heat and sprinkle with cheese.
