Biko

Biko is a traditional Filipino rice cake made from glutinous rice, coconut milk, and brown sugar, topped with latik for added flavor.

Procedure:

  1. Wash the glutinous rice 2 to 3 times and rinse.
  2. In a cookware, add the glutinous rice, pandan leaf and coconut milk.
  3.  Cook the rice in a low heat. Once it starts boiling, mix it and cover again.cooked for another 10mins or until the glutinous rice is fully cooked.
  4. When the rice are cooked already, add the ube condensed milk and mix with the rice
Procedure:
  1. In a cookware put 2 cans of coconut cream and the muscuvado sugar and stir, cook until it becomes thicken.
  2. When the mixture is ready, add it with the cooked rice and spread evenly.
  3. Cook the Biko in medium heat for about 20mins.
