Mango Sticky Rice with Creamy Coconut Milk

A Thai dessert with sweet sticky rice, ripe mango slices, and creamy coconut milk for a perfect balance of flavors.

Ingredients:

Procedure:

  1. Put the 2 cups of glutinous rice in a bowl. Wash and drain.
  2. After draining, add water to the rice and soak overnight or atleast 6hrs.
  3. Put the banana leaves in the grater, add the rice and you can put pandan leaves (optional).Put
  4. water in the skillet to steam the rice. Cook for about 25 minutes in medium heat or until the rice tenders.
  5. In a cookware, put the coconut milk, sugar and salt. Stir the mixture, add pandan leaf and bring to a boil. Cook for 3 to 6 mins.
  6. Prepare the cooked rice, pour half of coconut sauce mix and set aside for 10mins.
  7. Return the remaining coconut sauce to a low simmer.
  8. Mix the water and cornstarch. Dissolve the corn starch, stir until it thickens for about 3 mins.
  9. Prepare the mangoes and slice. Put in a plate with the cooked glutinous rice and add sauce on top of the rice. Top with toasted sesame seeds and serve.
