Ingredients:
- 2 Cups Glutinous Rice
- 2 Cups Water
- Banana Leaves
- Pandan Leaves
- 2 Cups Coconut Milk
- 1/2 Cup Sugar
- Salt
- 1 tsp. Cornstarch
- 2 tbsp. Water
- Toasted Sesame Seeds
- Mango
Procedure:
- Put the 2 cups of glutinous rice in a bowl. Wash and drain.
- After draining, add water to the rice and soak overnight or atleast 6hrs.
- Put the banana leaves in the grater, add the rice and you can put pandan leaves (optional).Put
- water in the skillet to steam the rice. Cook for about 25 minutes in medium heat or until the rice tenders.
- In a cookware, put the coconut milk, sugar and salt. Stir the mixture, add pandan leaf and bring to a boil. Cook for 3 to 6 mins.
- Prepare the cooked rice, pour half of coconut sauce mix and set aside for 10mins.
- Return the remaining coconut sauce to a low simmer.
- Mix the water and cornstarch. Dissolve the corn starch, stir until it thickens for about 3 mins.
- Prepare the mangoes and slice. Put in a plate with the cooked glutinous rice and add sauce on top of the rice. Top with toasted sesame seeds and serve.
